8 ounce ball of fresh mozzarella diced into bite size pieces
16 ounce pkg of wild arugula
12 oz jar of pesto
Instructions
Place tomatoes on a plate and season with salt to bring out the juice and set aside.
On a large platter lay out the arugula and drizzle the pesto onto the bed of arugula. Next, lay the tomatoes on top of the salad. Sprinkle crumbled walnuts on the salad, add the diced mozzarella onto the salad. Drizzle more pesto onto the salad. Season with cracked black pepper and serve.
