Red Velvet Waffles with Ice Cream | Living By Design

Ingredients
- 2 cups all-purpose flour
- 1⁄4 cup sugar
- 1 tablespoon plus 1 teaspoon baking powder
- 1 tablespoon Dutch processed cocoa powder
- 3⁄4 teaspoon table salt
- 1 3⁄4 cups buttermilk
- 1/3 cup (5 1/2 tablespoons) unsalted butter, melted and cooled
- 2 large eggs
- 2 teaspoons vanilla extract
- 1⁄2 teaspoon distilled white vinegar
- 2 tablespoons red food coloring
- Nonstick cooking spray
- Vanilla Ice Cream, for serving
- Maple Syrup, for serving
- Chocolate Sauce
Instructions
- Whisk the flour, sugar, baking powder and cocoa in a large bowl. In a separate bowl, whisk the buttermilk, melted butter, eggs, vanilla and vinegar together until smooth, then stir in the red food coloring. Add the buttermilk mixture to the dry ingredients and use a spatula to mix until smooth.
- Heat a waffle iron according to the manufacturers' instructions. Spray the waffle iron with nonstick cooking spray and then pour a scant 1 cup of the waffle batter onto the waffle grid. Close the iron and cook until the waffle is deep red and crisp on the outside, about 3 minutes. Repeat with the remaining waffle batter.
- To serve the waffles, place a scoop or two of vanilla ice cream and drizzle with Maple Syrup OR Chocolate Sauce.
