  • 1 ounce rose water
  • 3 ounces (1/4 cup plus 2 tablespoons) gin
  • 1 ounce (2 tablespoons) fresh lime juice

Instructions

For Lavender Syrup:
  1. Bring 3⁄4 cup water to a boil and add all the ingredients. Reduce the heat and simmer, stirring occasionally, until sugar dissolves, about 5 minutes. Let cool and strain through a sieve. Syrup will keep in the refrigerator, tightly covered in a glass jar, about 2 weeks.

For Cocktail:
  1. Fill a high ball glass with ice. Add the gin, lime juice, lemon juice and Lavender Syrup, then top with tonic water.
  2. Garnish with lime wedge or slice and a sprig of lavender.
