Homemade Potato Chips | New Soul Kitchen

Ingredients
- 6 large white potatoes
- 2 quarts of vegetable oil
- ½ tbs BBQ seasoning (unsalted)
- ½ tbs Cajun seasoning (unsalted)
- Salt
- Truffle salt
Instructions
Method: 1. Using a mandolin, thinly slice the potatoes into a bowl with water, lay the sliced potatoes on a sheet pan lined with parchment paper season with a pinch of salt, Cajun season, BBQ seasoning and toss making sure all potato chips are seasoned, 2. Place a large Dutch oven with cooking oil over medium high heat, making sure Dutch oven is only ¾ the way full with the oil. Drop the potato chips into the hot oil, 1 by 1. (do not drop potato chips into the oil by the hand full, they will clump and stick together) 3. Cook for 1 – 2 minutes until golden brown, remove from oil and place on a sheet pan with a rack to allow excess grease to drain off. Sprinkle on a little truffle salt while chips are still hot and repeat process until all of the chips are done. Serve with chicken sandwich.
