Farmer’s Market Salad with a Buttermilk and Herb Dressing | Just Eats with Chef JJ

Ingredients
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon kosher salt
- 1/8 teaspoon coarse ground black pepper
- 16 cups spring mix salad
- 1 cup grape cherries
- 1 cup thinly sliced zucchini half moons
- 1 cup thinly sliced yellow squash half moons
- 1 Fuji apple, chopped
- 1/2 cup blue cheese, crumbled
- 1 cup roasted walnuts
- 1⁄2 cup raisins
- 2 cups diced roasted chicken
- 1 cup Herbaceous Buttermilk Dressing, recipe below
Instructions
- Combine everything in a large bowl and toss well to coat. Serve in chilled bowls.
For Herbaceous Buttermilk Dressing
- Combine everything but the buttermilk, seasoning and herbs and mix well. Whisk in the buttermilk until the dressing is smooth. Season to taste and stir in the chopped herbs.
