Instructions
Ingredients for Crab Stuffed Tilapia:
- 4 tilapia fillets
- 2 cups lump crab meat
- ½ cup breadcrumbs
- 3 tablespoons mayonnaise
- 1 ½ tablespoon Dijon mustard
- 2 cloves garlic, minced
- 3 tbs fresh lemon juice
- ¼ tsp black pepper
- Kosher salt to taste
- ¼ tsp of oregano
- ¼ tsp of rosemary
- Pinch of brown sugar
- ¼ tsp smoked paprika
- ½ tsp Cajun seasoning
- Pinch of season salt
Ingredients for Creole Sauce:
- 1 tablespoon olive oil
- 3 tablespoons of butter
- 1 small onion, finely chopped
- 1 bell pepper, finely chopped
- 1 cup of diced tomatoes
- 1 teaspoon Cajun Seasoning
- 2 tablespoons of brown sugar
- ½ teaspoon dried oregano
- ¼ teaspoon rosemary
- 3 cloves garlic, minced
- 3 tablespoons fresh lemon juice
- 1 teaspoon paprika
- ½ cup of white wine
- 3-4 Fresh parsley leaves
- Salt and pepper to taste
- Additional Fresh parsley, chopped (for garnish)
Ingredients for Dirty Rice:
- 1 cup long-grain white rice
- 1¾ cups chicken broth
- ½ pound ground beef
- 1 tablespoon olive oil
- ½ onion, finely chopped
- ½ bell pepper, finely chopped
- 2 cloves garlic, minced
- ¼ teaspoon paprika
- ¼ teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 350°F.
- In a mixing bowl, combine the lump crab meat, breadcrumbs, black pepper, kosher salt, oregano, rosemary, brown sugar, smoked paprika, and Cajun seasoning and mix well. Next, mix in the mayonnaise and Dijon mustard. Once all ingredients are evenly mixed together, set mixture aside.
- Lay the tilapia fillets flat on a work surface, and season with salt, pepper and Cajun seasoning to taste. The coat a baking dish with olive oil and set aside. Spoon the crab mixture evenly onto each fillet, then roll up the fillets to enclose the filling. Place the stuffed tilapia seam side down in the prepared baking dish, coated with olive oil.
- Bake the stuffed tilapia in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
Instructions for Creole Sauce:
- While the tilapia is baking, prepare the Creole sauce. Heat olive oil and butter in a skillet over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.
- Add the minced garlic, diced tomatoes, white wine, brown sugar, smoked paprika, dried oregano, Cajun spice, brown sugar, salt, and pepper to the skillet. Stir to combine.
- Simmer the sauce for 10-15 minutes, stirring occasionally, until it thickens slightly. Taste and adjust seasonings as needed.
- Once the sauce is ready, remove it from the heat and set aside.
Instructions for Dirty Rice:
- In a medium saucepan, heat olive oil over medium heat. Add the chopped onion, ground beef and bell pepper, and sauté until softened, and ground beef done about 8 minutes.
- Add the minced garlic, paprika, dried thyme, salt, and pepper to the saucepan. Cook for an additional 1-2 minutes, until fragrant.
- Stir in the rice and chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and liquid is absorbed.
- Once the rice is cooked, fluff it with a fork and sprinkle with chopped fresh parsley.
- Place rice on a place, lay tilapia on top and scoop creole sauce on top and enjoy.
