  • Brick Oven Cornish Hen
  • 2 cornish hens
  • 1 ½ teaspoons granulated garlic powder
  • 1 ½ teaspoons granulated onion powder
  • Kosher salt
  • Cracked black pepper
  • Olive oil
  • 3 sprigs rosemary
  • 3 sprigs thyme
  • 1 brick covered in foil

Instructions

Preheat the oven to 400 degrees Using a plastic cutting board, carefully cut the backbone out of the cornish hens. Save for chicken stock or discard. Season the cornish hens on both sides with garlic powder, onion powder, salt and pepper as desired. Preheat two 12 inch cast iron pans over medium high heat with enough olive oil to coat the pan. Season the oil with rosemary and thyme. Lay each cornish hen in the pan skin side down for about 1-2 minutes or until it becomes golden brown in color. *You can also sear each hen in the same pan and remove to a sheet pan. Flip the hen over and place a brick on top. Transfer to the oven and roast through completely for roughly 30-40 minutes or until the internal temperature reaches the thickest part of the chicken (thigh) registers 165 degrees.
